Today, I have made white chocolate ganache icing for a cake this weekend.  I will post pictures later, after it has set. I have decided that white chocolate ganache icing is one of my favorite icings.  One thing I learn is you can not make the ganache icing and use it the same day.  So, ganache icing should be made the day before you need to use it.

Recipe:
3- 11 oz. bags of Ghirardelli Classic White baking Chips
16 oz. HEAVY whipping cream



Place chocolate chips into stainless steel bowl.  Pour heavy cream into a heavy sauce pot, on medium high heat.  Don't go to far from the stove.  Just as the cream starts to bubble, remove it from the heat.  Pour over chocolate chips.  Making sure that chocolate chips are submerged in cream.  Let sit 5 minutes.  Stir with spatula (NOT A WHISK).  If there are small pieces of chocolate left, place bowl over a pot of simmering water(double boiler).  Stir with spatula until smooth and lump free.  Remove bowl from heat, let bowl stand at room temp uncovered. Once ganache has come to room temp, cover with clear wrap and let sit on counter overnight.  This recipe will cover 10x10 square cake, filled and iced, 6" round and 8" round, filled and iced.

Well, today I am becoming a Blogger.  Alittle nervous, not sure where it will take me. My name is Mandy Duran, I am a "Domestic Diva," LOL. I am married to a handsome, wonderful, funny, sensitive, charming, hard working Man and DAD for 10 years and 9 months.  Not to many of them around, so if you have a Man like I do, keep him, treat him right and Laugh alot and don't sweat the small stuff.  We were Blessed with 3 wonderful children, Olivia 9, just turned 9 yesterday, Sophia 6, and John "Papi" 2 and a half. I am that person that people call "jack of all trades," not really sure what I have mastered.  Being a wife, Mom and all that follows is a learning experience in itself.  When will I master any of those?  NOT sure.  But I try to be the Best wife and Mom I can be. 
I have been a cake decorator for 8 years, something that I really enjoy doing.  It is very time consuming, when you children that want to help, and when you have to drop and pick them up from school and  take them to dance.  To many interruptions. It is stressful, rewarding, fun and relaxing (only when everyone is asleep).  I decided in Oct 2011 that I would slow down in the cake business.  Best decision so far.  I really enjoy baking with No expectations.  I own a variety of dessert recipe books and a few cookbooks.  When I got married I don't know how to cook, but it is something I have loved to learn.  My go to person is my MOM, which I think is the Best cook ever.  We share recipes all the time.  FUN!! I usually follow the recipe and she always tweaks it.  And it is always super good.  I enjoy finding recipes (on the web or in a book) that my kids will eat.like and eat.  Desserts are our FAVORITE.
I enjoy having our families over for holidays, parties or for any occasion.  We usually have a birthday parties for the kids here at our home.  Which I like.  Dad likes to have them elsewhere, that's okay, sometimes.  the cleaning before and after are always a PAIN.  I enjoy creating them parties.  I'm not as creative as other people, but it's fun.
I will only share with you ideas, tips  and recipes that have been tried and tested and are Mandy approved.
